Not too sure as i didn't really go to Taiwan for that, but the night markets are busy. But the landscape or cityscape was to me a bit monochrome...as in it's all a kind of reddish or plain colour and if the sky is cloudy then it all becomes a bit greyish. Lots of night markets around the several universities in Taipei – lots of nice places to visit. About the night market in Taiwan, I suggest 台東蛋捲 that try little bit at the beginning, and see whether you can resisit or not, there are various kind of food in any night market in Taiwan. Dun worry about the food here, there are always fast food shops in every corner, you can even get hot dogs in any of convenience stores like 7-eleven ir family mart. Convenient but hard to walk around, especially with pram, due to the crowds. As others suggested, stay in Taipei City is better. We spent a bit of time around Sun Moon Lake as well. The lake itself is quite nice, and the sun moon lake temple is just insane.
Another question – what's the best way to get around? Is hiring a car an option/would you recommend it? I'll be traveling on my own, so might be too scary/too expensive to consider driving? (I have no idea what the traffic is like – is it crazy like China, or manageable like Australia? In Asia, the only place I have driven a hire car is Japan). Take a look on tripadvisor, has some good reviews... We got a ride from Taipei via the west coast through Hualien then onwards to Pingtung, the rail to Kaohsuing and train back up from Kaohsuing to Taipei.

Minor problem with a Visa card when getting the Avis rental card.
It is good to have some educational farm tours. There aren’t much activities except paying for hay to feed the bunnies & piglets, resting near the fountain reading books or newspapers. I really think Sanxiantai is one of the best attractions on the east coast, the view was just amazing, but remember to bring sun protection with you as it is very sunny. We had a great time following the trail backwards and seeing the forest and seaside parks, as well as market gardens on the outskirts of town. One section is currently blocked, but it was easy enough to cycle around it. Cutest shops and photo ops - grab your food and art souvenirs here and some bites to eat while you are at it.
