We were invited along to experience this new hot pot destination and were highly impressed. The secret of a premier hot pot restaurant is in the quality ingredients and in the soup base. There are a choice of 80 ingredients to choose from, so pardon me for having a little bit of fun and putting up ingredients for shock value to the uninitiated. Geared to  family and groups, coming on your own is a far more expensive option as the broth comes in one size and you can choose two different broths. After taking over the old Dracula’s site in 2019, Panda has made its mark on Melbourne with its authentic Sichuan menu and free nightly entertainment. First, choose from their selection of seven soup bases — for those who are less spice inclined, don’t worry, there are heaps of chilli-free options. Then you can start filling your table with platters of fresh seafood, roses made out of ox tongue, or a smokey box of dry ice layered with their signature cuts of meat. At Dragon Hot Pot, our soup bases are based on  century old hot pot recipes. A combination of marrow bones cooked for over 12 hours, with more than 20 traditional Chinese herbs and a unique golden thick fragrant broth is what makes our hot pot stand out from the rest. Fans of Melbourne restaurant Kappo received a blow recently with the news that chef Kentaro Usami would serve his last multi-course meal on 9 June. We had a couple of the mixed bags and some of the starters. Emma was especially very helpful on the night and made sure we were taken care of. A very fun experience and I look forward to coming back. It’s so refreshing to go out to eat and enjoy it with the family. We were lucky enough to meet Sami one of the owners who was so accommodating to our needs.
